When it fills and lights up red, that's your cue to lean forward and hop. Pay attention to the gauge you can see on the back tire. It's all about compressing the back tire and leaning forward to bounce when that compression is at its peak. Generally, once you've leaned forward, you're safe from flipping backwards, so feel fine to lean back and initiate the hop. You can use throttle control to start accelerating forward more slowly, which lessens that effect. There's two ways you can handle the natural flip backwards caused by accelerating. At least in Fusion a majority of the challenges were solid and unique.

There's no way to tell if a contract is fine-tuned to a track in any significant way like my example above. There are some great contracts in Rising, it's just unfortunate they're buried deep in a bunch of crap. This is one of the harder challenges, as you have to endo while moving backwards to retain momentum, effectively putting that obstacle in the ninja class. For example, on the I Fell Tower track (iirc that's the name), you can't let go of gas, but there's a pretty long backwards ramp. These contracts are some of the most unique in the game, and a handful drastically change the way you navigate tracks. This is the best and fastest way to unlock content quickly imo. It takes two of these contracts to gain a level, and most of them are relatively easy. Once you complete these, the next difficulty level stadium will contain this class of contract. These contracts start in stadiums, and once you do the 3 found in a stadium, more unlock in the other tracks within the same set. If you are a confident enough Trials player to want to get the Extreme tracks unlocked as soon as possible, you can probably handle the Red Bull contracts that unlock around level 53. I'm just gonna put a PSA out there for any players here dealing with the grind:
